In a salad bowl, mix together the oil, mustard, salt, pepper, garlic, sliced shallot, lime zest and lime juice
Add all the kale to the bowl and mix using tongs. Ensure each leaf is covered in the dressing
Add the chopped dill and mix through
Toss through the potatoes, ensuring each piece is well coated with the dressing
Set the salad aside for at least 20 minutes for the kale leaves to soften down well
Serve alongside your favourite meat, pasta or even serve it for a picnic!
