How to make Healthy Potato Salad - The Miniature Life

I have had a number of requests for some healthy salad recipes so here is one of my favourites! This salad combines bitter kale and creamy potatoes in a delicious tangy wholegrain mustard and lime dressing. It’s a perfect side to rich hearty mains (think red meat or pasta dishes) and is super robust (it will last right through to the next day!). Though this a potato salad, I don’t use any cream or yogurt to form the dressing. To be very honest, though I love creamy potato salad, it’s just not feasible to enjoy n a regular basis.

This recipe will certainly change your outlook on potato salads!

What makes this salad AMAZING? The simple yet flavourful dressing. This is a super versatile dressing that can be used for so many different salads and combinations. The basic combination of lime, lime zest, wholegrain mustard and olive oil makes for a powerful mixture that you can use over and over again.

Healthy Potato Salad

A healthy kale and potato salad with a fresh dill and mustard dressing

Equipment

  • Large salad bowl

Ingredients
  

  • 500 g baby or chat potatoes, boiled and chopped into small pieces
  • 1 bunch of fresh kale, shredded and chopped
  • ¼ cup chopped fresh dill
  • 1 shallot, finely sliced
  • 1 garlic clove minced
  • ¼ cup olive oil
  • 2 tbsp. wholegrain mustard
  • 1 tbsp. lime juice
  • zest of 1 lime, grated
  • salt and pepper

Instructions
 

  • In a salad bowl, mix together the oil, mustard, salt, pepper, garlic, sliced shallot, lime zest and lime juice
  • Add all the kale to the bowl and mix using tongs. Ensure each leaf is covered in the dressing
  • Add the chopped dill and mix through
  • Toss through the potatoes, ensuring each piece is well coated with the dressing
  • Set the salad aside for at least 20 minutes for the kale leaves to soften down well
  • Serve alongside your favourite meat, pasta or even serve it for a picnic!
