In my family, Sunday breakfast is always cooked by yours truly. Every weekend I try to make something different as a treat for the family and without fail my sisters top request has always been my Fluffy Nutella Pancakes.

Fluffy Nutella Pancakes
Easy, fluffy pancakes made right at home
Equipment
- Fry pan
- Mixing bowl
- Whisk
- Spatula
- Wooden spoon
Ingredients
- 2 cups self raising flour
- ¼ tsp baking soda
- 3 tbsp. Nutella or any other chocolate hazelnut spread
- 1 tsp vanilla extract
- 1 egg, separated
- 1½ cups full cream milk
- 2 tbsp. yogurt
- Pinch of salt
Instructions
- In a mixing bowl, whisk the egg white until soft peaks form
- In another bowl or jug combine the milk and yogurt. Add the Nutella and combine until smooth and homogenous
- Sift the self-raising flour, baking soda and salt into a mixing bowl and combine
- To this flour, add the egg yolk, milk mixture and vanilla extract and mix until smooth and just combined
- Gently fold one spoon of the dry mixture into the egg white, and then fold the remaining flour in
- Heat a non-stick flat pan over a low heat setting
- Use a ladle to spoon out the batter into the pan
- Cover the pan with a lid to allow the pancake to steam and rise
- Once bubbles have formed right around the pancake edge and the color just starts to turn, flip the pancake and continue to cook for another minute or so
- Remove the pancake from the heat. Repeat with the remaining batter. Spread some butter over the warm pancakes and serve hot with maple syrup
