Protein powder is fantastic in shakes, but it works even better in a simple no yeast-bread. This bread works as a delicious breakfast, or as a snack to keep you going through the day. Surprisingly light, packed with flavour and the best thing is that it’s not overly sweet. My recipe doesn’t use any sugar, and instead uses maple syrup but it still doesn’t result in a very sweet outcome – feel free to add more syrup if you prefer sweeter breads.

I love making a batch of this bread and eating it fresh from the oven, with a bit of extra toasting and topping it off with plenty of delicious butter. The best part of this recipe is how simple it is, there’s no crazy intense method to the madness here – it’s a simple loaf and something you can whip up in no time.

Chocolate Protein Bread

  • Loaf tin
  • Stand mixer with mixing bowl
  • Mixing bowl

Ingredients
  

  • 1 cup oat flour
  • 1 cup whole wheat flour
  • ½ cup chocolate protein powder
  • 1 egg at room temperature
  • 1 tbsp. instant coffee
  • ¼ cup maple syrup or honey
  • 60 g butter at room temperature
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • Chocolate chips, chopped nuts or chopped dried fruit optional

Instructions
 

  • Preheat the oven to 170°C/340°F and line a loaf tin with baking paper
  • In a mixing bowl combine the oat flour, whole wheat flour, baking powder, baking soda and protein powder. Use a whisk to remove any lumps
  • Using a stand mixer, combine the butter, egg, vanilla extract, and maple syrup until light and fluffy
  • Add ¼ of the dry ingredients to the wet ingredients at a time and gently fold everything through until just combined
  • Pour the prepared batter into the loaf tin and smooth over
  • Place the loaf tin in the oven and bake for 30-140 minutes or until a skewer, after inserting, comes out clean. Rotate the baking tray every 15 minutes to ensure an even bake
  • Remove from the loaf tin and let it rest on a cooling rack
  • Serve warm or toasted with a hint of butter
