Panch Phoron or Panch Putana literally means 5 spices. Largely used in the Eastern regions of India and Bangladesh, this is a lovely blend of earthy whole spices that can be used in so many recipes. I love making a simple egg scramble with this spice blend, alongside plenty of delicious Indian recipes.

Now this staple spice blend is also very simple to make at home using some whole spices. You will need cumin seeds, brown or black mustard seeds, fennel seeds and nigella seeds in equal quantities, and a little less of the fenugreek seeds. Together you get a beautiful spice mix that smells amazing and can be so many different ways and recipes – I love it!

How to make Panch Phoron?

This is a relatively simple spice blend and is actually whole in cooking, not ground. All you need to do is combine the whole spices in a jar and give it a shake.

For this you will need:

  • whole cumin seeds
  • whole fenugreek seeds
  • whole black mustard seeds
  • whole fennel seeds
  • whole onion seeds.

Unsure of where to find the spices?

Some supermarkets will stock ingredients such as cumin seeds, black mustard seeds, fennel seeds and onion seeds. It’s the fenugreek seeds that may prove a little more difficult to source. I recommend trying your local South Asian grocers for this. You may also find panch phoron pre-made and packaged here as well!

Equipment

  • Small jar

Ingredients
  

  • 1 tbsp. whole cumin seeds
  • 1 tbsp. whole black mustard seeds
  • 1 tbsp. whole fennel seeds
  • 1 tbsp. whole onion seeds also called nigella seeds
  • tsp whole fenugreek seeds available at South Asian grocers

Instructions
 

  • In a jar combine all the whole spices together
  • Seal with a strong lid and keep out of reach of children. Avoid getting moisture into the spice jar
